Smoke It, Fry It, Grill It

According to a recent article from The Washington Post, the weather has been unseasonably warm on the east coast. In fact, the article states that in some areas, temperatures have reached their highest levels in early November in decades. This means you can finally cook your Thanksgiving Day turkey outdoors without chattering teeth and having to dress in layers.

You might be raising youtdoor warmingour eyebrows at the thought of cooking your turkey outdoors, rather than the traditional oven method. However, we can assure you the following methods will ensure your bird is tender and juicy!

Smoke It – A kamado-style grill, or a smoker, will give your turkey a crisp exterior with a moist interior. The first step is to add wood chips to the bottom of your smoker for added flavor; then build your fire in the coal pan, just as you would with any other type of meat. When the coals are heated, fill the water pan and set in place. Next, place your pre-seasoned turkey on the grill grate, and close the lid. Remember, the slower you cook the turkey, the more tender it will be. Keep your smoker at approximately 300 degrees. And, if you don’t already know the tricks of the trade, poultry cooks for about 20-30 minutes per pound, so be sure to watch the timer. Also, expect to add fresh coals and water to your smoker throughout the cooking process.

Fry It – If you live in the south, chances are you have probably had a deep fried turkey. Frying a turkey can be a dangerous task, if you don’t follow the right steps and take the needed safety precautions. Place your fryer in a grassy area, away from the rest of your preparations that are being completed at your outdoor kitchen. Fill your fryer with enough oil to fully cover your turkey; this is probably the most important step to adhere; heat to 350 degrees. Very carefully, lower the room-temperature, dry-rubbed turkey into the hot oil. Fry your bird for three minutes per pound, plus an extra five to ensure it’s cooked through. Again, carefully, remove the turkey from the fryer and place on a large plate with napkins to soak up the oil.

Grill It – This may not be the most common method to cook a turkey outdoors, but it sure can be tasty! Once you have cleaned the bird, tie the legs together and twist the wing tips under the back. Brush with olive oil; salt and pepper to taste. Preheat your gas grill to 500 degrees then turn the burners down to a medium flame. Place your turkey breast side up in a roasting pan and position on the grill rack; cook for approximately 11-13 minutes per pound, or until the thermometer reaches 180 degrees.

As a helpful tip for all three methods, once your turkey is cooked through, let it rest 15 minutes prior to carving. Serve with your favorite sides.

Portable Outdoor Kitchen Project Profile: Greenwich Country Club

Outdoor kitchens are not just booming in the residential market. Hospitality and commercial properties such as hotels, luxury resorts, golf and country clubs, restaurants, and other venues are also jumping on the bandwagon. Tailgate at Home Using Your Outdoor Kitchen

This approach has multiple advantages over the crowded and messy experience of tailgating in the stadium parking lot. Typically, grilling on location before a game consists of bland burgers or hot dogs with ketchup and mustard as the only condiments. With an at-home tailgate, you can craft a creative and unrestrained menu while entertaining your guests with more ease and comfort.

If you are looking to take that traditional hamburger up a notch, here is a recipe that is sure to wow your fellow football fans.

Tailgating Burger

Preheat your outdoor grill for high heat. Then, combine ground beef (2 pounds), barbecue sauce (1/4 cup), lager style beer (1/4 cup) , egg (1), bread crumbs (1/4 cup), white or green onion (1/2 cup chopped), fresh basil leaves (2 tablespoons), Worcestershire sauce (2 tablespoons), minced garlic (2 teaspoons), grated Romano or asiago cheese (1/4 cup) and salt and pepper to taste in a large bowl. Mix lightly with your hands and form mixture into 8 even patties. Lightly brush the grill grate with oil, place the patties on the rack and cook to your preferred tenderness. Served on a bun with lettuce, tomato, onions, pickles and your choice of cheese, this recipe satisfies that tailgate tradition and also makes you feel like a professional chef in your own outdoor kitchen!

Another great advantage to tailgating at home with your outdoor kitchen is the multiple outdoor specialty cooking appliances that are available in addition to the outdoor grill. Side burners that accompany your traditional grill can be used to make the perfect side dishes to complement your grilled hamburgers. Here is a recipe for homemade baked beans that are cooked on a stovetop.

Stovetop “Baked” Beans

To start, melt margarine or butter (1 tablespoon) in a saucepan over medium-high heat. Next, add chopped onion (1 1/4 cups), chopped green bell pepper (3/4 cup) and minced garlic (2 cloves) and sauté for 4 minutes. Stir in ketchup (1 cup), brown sugar (1/4 cup), maple syrup (1/4 cup), Worcestershire sauce (2 tablespoons), barbecue smoked seasoning (2 teaspoons), mustard (2 teaspoons), red beans (1 16-ounce can, drained) and Great Northern beans (1 15.8-ounce can, drained) and bring to a boil. Reduce the heat and simmer for fifteen minutes, stirring occasionally and serve warm. Incorporating side dishes like this makes your tailgate menu more interesting and well-rounded.

Since most of us are already experiencing warmer weather and have begun planning outdoor barbeque extravaganzas, we wanted to share an example of how one homeowner is capitalizing on the opportunity to take outdoor entertaining to the next level this season.

Nestled in Avon, Conn., this stunning backyard oasis, designed by Michael Gotowala, founder of the Outdoor Kitchen Design Store by Preferred Properties, a dealer of Brown Jordan Outdoor Kitchens, consists of two levels and highlights multiple cooking and grilling stations.

The upper level features Brown Jordan Outdoor Kitchens’ cabinetry, along with a stone grill island and sprawling granite countertops providing ample space for caterers to prepare lavish spreads.
